Massimo Bottura’s 3 Michelin star restaurant in Modena, Italy was ranked No. 1 in the world in 2016. His avant-garde signature dishes include ‘Memory of a Mortadella Sandwich’, a deconstruction of a sandwich his mother made for him when he was a child, ‘Oops! I Dropped the Lemon Tart’, ‘An Eel Swimming Up the Po River’ and the ‘Five Ages of Parmigiano Reggiano’ in which the cheese is crackly, chewy, creamy, runny and foamy all at once.
